Avocado soup

Here’s a recipe for a cold spring-summer soup

Serve the avocado soup as an appetizer, or with a fresh slice of bread as a light main course.

For example, the black cumin bread tastes very good with it.

Wonderfully refreshing!

This avocado soup is quick, easy, and super delicious!

The Ingredients are for 4 pers. as an appetizer or 2 pers. as the main course:

  • 1 avocado
  • 150 g cucumber
  • 1 clove of garlic or about 20 cm of garlic herb
  • 2 mint leaves Morocco-mint is excellent
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tsp soy sauce
  • 1 tsp vinegar
  • 3 dl stock
  • salt/pepper to taste
  • Ice cubes to taste


  • Peel avocado and remove pit
  • Peel cucumber and garlic
  • Blend avocado and cucumber with the rest of the ingredients together until you get a homogeneous, creamy mixture.
  • If it becomes too thick, add more stock.
