Bread from the Alps

For the dough:

  • 250 g half white flour or half whole grain, half white flour
  • 100 g raw sugar
  • 1 tbsp baking powder
  • 1 tbsp cocoa powder
  • 1 tbsp spices cloves, cinnamon, ginger, cardamom, macis, ground and in equal parts
  • 2 dl milk
  • 50 g liquid honey

For the glaze:

  • 50 g dark chocolate
  • 20 g butter
  • 4 tbsp water
  • 200 g icing sugar
  • 1 tbsp cocoa powder



  • Preheat the oven to 180°C.
  • Line a baking tray with baking paper.
  • Mix the dry ingredients, then add the liquid ingredients and mix well.
  • Spread the dough on the baking tray and bake at 180°C in the middle of the oven for about 30 minutes.
  • After cooling, cut into pieces of about 2.5 x 2.5 cm.

  • Melt the chocolate, butter and water over a low heat.

  • Add icing sugar and cocoa powder and stir until smooth
  • Add the baked pieces to the icing and mix well. Let the glazed pieces dry on a baking paper.
