Banana fritter with tomato and onion sauce

  • 2 plantains
  • 2 large onions
  • 1-2 cans of pelati peeled, chopped tomatoes or 3-4 fresh tomatoes (cut into pieces)
  • oil for frying
  • Salt/pepper to taste
  • Ev. spices like cajoun mixture



  • Peel plantains, cut into pieces about 4 cm long
  • Shallow fry banana pieces in enough oil until golden brown on all sides. Drain on a paper towel

  • Place two banana pieces next to each other and flatten them (this works very well between two plastic sheets, e.g. in a plastic bag with a flat pan).
  • Shallow fry the flat bananas again in the oil and sprinkle with a little salt

Tomato and onion sauce

  • Peel the onions and cut them into big pieces
  • Fry in a little oil
  • Then add tomatoes and continue cooking until everything is soft.
  • Season with salt and pepper and if you like with a spice mixture like Cajoun
